Hemp Seed Pesto

This versatile “sauce” can be used as a topping to add a potent punch of flavor to your green salads (not just pasta noodles!), and can be doubled up as a dip for veggie crudité and/or flax crackers. Try using a spoonful in your raw soup and dressing recipes to liven them up a bit! This raw vegan recipe trades in the usual walnuts that you’ll see in many pesto recipes for nutrient-rich hemp seeds – which pack in the healthy omega fats as well as a solid dose of protein.

Ingredients

• ½ cup hemp seeds
• ½ cup pine nuts
• ½ cup basil
• 2-3 cloves of garlic
• Juice from ½ a lemon
• ¼ cup olive oil
• 1 tsp. sea salt

Instructions

1. Combine all ingredients in food processor
2. Blend until smooth & serve with fresh cut veggies or flax crackers
